Just a simple triple berry syrup

6oz fresh raspberries
6oz fresh blueberries
12oz fresh blackberries
2 cups sugar
4oz honey
.5 tbps unsalted butter
Salt to taste

 

  • Put the berries into an appropriately sized sauce pan with a couple ounces of water and place over medium heat.
  • Add the two cups of sugar and four ounces of honey to the pan and stir to combine.
  • Cook at a low simmer for 15 to 20 minutes, then add the butter and simmer for another 5 to 10 minutes.  Stir as needed.
  • Puree with an immersion blender or mash by hand the berries until an even consistency is achieved.
  • If desired pour through a mesh strainer to remove seeds and large bits of skin

 

If stored in an air tight container it will keep for 12 to 14 days typically.
